Thai Flavoured Winter-Warming Soup

This soup will keep you warm throughout the winter months. As well as being really good for you it will fill you up and keep you going.
Ingredients
  • 2 tbsp olive oil
  • 1 white onion, chopped
  • 500g carrots, chopped
  • 1 tbsp cumin
  • 1 tsp group ginger
  • 1 tsp group coriander
  • 200g natural coyo vegan yoghurt
  • Vegetable stock cube and 500ml water
  • Salt and pepper, to taste
Instructions
  1. Toss chopped carrots with olive oil, cumin, ginger, coriander and salt and pepper. Roast in the oven at 180 degrees C for 30 minutes or until soft and slightly caramelised.
  2. Sauté onion in a large pan in 1 tbsp olive oil.
  3. When soft, add the roasted carrots, 500ml veggie stock and 200g natural coyo.
  4. Simmer for 5 minutes then blend with a hand blender or Vitamix until desired consistency is reached.
