Ingredients
- 4 medium to large potatoes, cubed
- 1 medium to large onion, thinly sliced
- Curry paste
- Spices and curry leaves (see recipe for quantities)
Instructions
- Boil potatoes
- In a separate pan, fry 2 tbsp of oil and 1flat tsp black mustard seeds (be careful not to use too much as it makes the dish too bitter) at a medium heat
- Add onion
- Add 1tsp of turmeric salt and pepper
- Add curry paste
- Add potatoes
- Add 5 curry leaves
- Splash more oil if necessary and a pinch of mustard seeds
