  • 4 medium to large potatoes, cubed
  • 1 medium to large onion, thinly sliced
  • Curry paste
  • Spices and curry leaves (see recipe for quantities)
  1. Boil potatoes
  2. In a separate pan, fry 2 tbsp of oil and 1flat tsp black mustard seeds (be careful not to use too much as it makes the dish too bitter) at a medium heat
  3. Add onion
  4. Add 1tsp of turmeric salt and pepper
  5. Add curry paste
  6. Add potatoes
  7. Add 5 curry leaves
  8. Splash more oil if necessary and a pinch of mustard seeds
