A big hit with my two-year old nephew, this apple cake is simple to prepare and delicious!
Ingredients
  • 250g self-raising flour
  • 1 teaspoon (heaped) bicarbonate of soda
  • 1 teaspoon (heaped) cinnamon
  • 1/2 teaspoon salt
  • 150 g caster sugar
  • 350 g apple sauce (6-8 apples cooked in small amount of water and mashed – if they are small use 8 of them, if they are bigger, only use 6.)
  • 100 g margarine
  • 2 tablespoons golden syrup
  • 100 g raisins
Instructions
  1. Peel the apples and cut into pieces. Simmer them until they’re soft (about 15-20 mins), then mash and allow to cool.
  2. Cream the margarine and sugar together until soft and creamy-coloured. Add the cooled apple sauce and syrup to this.
  3. Sift the flour into a separate bowl and add the bicarbonate of soda, cinnamon and salt and mix together.
  4. Add these dry ingredients to the apple sugar mix and add the raisins.
  5. Bake in a greased loaf tin at 180°C/350°F/gas mark 4 for about 45 minutes (or less depending on the oven).
