Courgette & Tomato Pasta

vegan pasta tomatoes and courgettes

Ingredients

400g pasta

2 courgettes, sliced thin

200g cherry tomatoes, halved

3 garlic cloves, minced

Olive oil, salt, pepper

Fresh basil

Nutritional yeast (optional)

Instructions

Cook pasta, reserve some water afterwards.

Sauté garlic, courgettes & tomatoes in olive oil.

Toss in pasta, season, and add a splash of pasta water.

Top with fresh basil and nutritional yeast (optional).
