
Summer Pea & Mint Soup

Ingredients
300g fresh garden peas
1 small onion, chopped
1 tbsp olive oil
500ml vegetable stock
Handful of fresh mint
Salt & pepper to taste
Instructions

Sauté onion in olive oil until soft.

Add peas and stock, simmer for 5 minutes.

Stir in mint, blend until smooth.

Season and serve warm or chilled.
