Chanukah-style filled fritters, crisp and chewy. These rustic filled dough pockets are soft inside and crackly on the outside.
½ cup chopped dried dates
½ cup chopped dried figs
¼ cup water or orange juice
½ tsp cinnamon
Pinch of salt
Optional: splash of vanilla
2 cups all-purpose flour
2 tbsp sugar
1 tsp instant yeast
½ tsp salt
¾ cup warm water
2 tbsp neutral oil (plus more for frying)
Make the filling: Simmer dates, figs, water or orange juice, cinnamon, and salt for 5–7 minutes until soft. Mash into a thick paste and cool completely.
Make the dough: Mix flour, sugar, yeast, and salt. Add warm water and oil. Knead for 5–7 minutes until smooth and elastic. Cover and let rise for 1 hour until doubled.
Shape & fill: Divide dough into golf-ball-sized pieces. Flatten each into a small circle, add 1 tsp filling in the center, pinch closed, then gently flatten again.
Rest: Let filled dough rest for 10 minutes while heating oil.
Fry: Heat oil to medium (about 175°C). Fry dough pieces for 1–2 minutes per side until puffed and deep golden.
Finish: Drain briefly. Dust with powdered sugar or cinnamon sugar if desired.
Optional finishes: Drizzle with silan (date syrup) or dust with powdered sugar + cardamom.
