Crispy outside and tender inside, these yummy latkes use chickpeas for protein and structure!
1½ cups cooked chickpeas, well drained
1 small onion, finely grated or minced
2 cloves garlic, finely grated
¼ cup chickpea flour (or all-purpose flour)
2 tbsp nutritional yeast (optional but tasty)
2 tbsp olive oil (for the batter)
2 tbsp fresh parsley or dill, finely chopped
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika or sweet paprika
¼ tsp baking powder (for lightness)
Oil for frying (neutral oil like sunflower or canola)
Mash the chickpeas until mostly broken down but not smooth.
Stir in onion, garlic, flour, nutritional yeast, olive oil, herbs, salt, pepper, paprika, and baking powder until thick.
Let the mixture sit for 5–10 minutes to firm up.
Heat about ¼ inch of oil in a skillet over medium heat. Scoop 2 tbsp per latke, gently flatten, and fry for 3–4 minutes per side until golden.
Transfer to a rack or paper towels and sprinkle lightly with salt.
