This is a test recipe created to verify the Sanity integration with the JVS website. It features a simple but delicious vegan dish that showcases the recipe management system.
2 cups cooked quinoa
1 can chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon salt
Fresh herbs (parsley, mint, or cilantro)
Black pepper to taste
Cook quinoa according to package instructions and let cool
Drain and rinse chickpeas thoroughly
Halve cherry tomatoes and dice cucumber
Finely chop red onion
In a large bowl, combine quinoa, chickpeas, tomatoes, cucumber, and onion
In a small bowl, whisk together olive oil, lemon juice, and salt
Pour dressing over the salad and toss gently
Add fresh herbs and black pepper to taste
Serve immediately or refrigerate for up to 2 hours
