This vibrant salad is inspired by flavours of Southeast Asia, with the ginger and lime dressing, that makes it sing! To make it a more substantial meal you can turn it into a noodle salad by adding noodles and tofu.

Ingredients

½ a small red or green cabbage

2 carrots

50 grams of fresh mint or coriander leaves (optional)

20 grams of sesame seeds

1 teaspoon of grated fresh ginger

2 tablespoons of tamari or soy sauce

2 tablespoons of sesame oil

1 teaspoon of white miso paste (optional)

Zest and juice of 1 lime

Instructions

Finely slice the cabbage and grate the carrot and add these to a large mixing bowl.

Roughly chop the mint or coriander leaves.

Combine all the dressing ingredients together in a small mixing bowl.

Stir the dressing onto the salad.

Roast the sesame seeds in a small dry frying pan for about 3 minutes until they start to brown. Stir these through the salad.
