Sambusak are delicious pastries filled with a chickpea mixture, perfect as a snack or appetizer.
2 cups flour
½ cup olive oil
½–¾ cup warm water
1 tsp salt
1 cup mashed chickpeas
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
Salt to taste
Chopped parsley to taste
Mix flour, olive oil, and salt; gradually add warm water to form dough.
Let the dough rest for 20 minutes.
In a bowl, combine mashed chickpeas, olive oil, cumin, paprika, salt, and chopped parsley.
Roll the dough into circles, fill with the chickpea mixture, fold into half-moons, and seal edges.
Bake at 190°C for 20–25 minutes until golden.
