A fresh, herb-forward salad using quinoa instead of bulgur.
Recipe from our JVS Pesach cook book 2026!
(Note this recipe contains kitniyot)
150g cooked quinoa, cooled
2 large bunches parsley, finely chopped
1 bunch mint, finely chopped
3 tomatoes, finely diced
2 spring onions, sliced
3 tbsp olive oil
4 tbsp lemon juice
Salt, to taste
Ensure herbs are dry.
Combine all ingredients.
Toss with dressing.
