A simple, fragrant side dish with fresh herbs and gentle sweetness. Serve chilled with matzah or vegetable crudités.
250g basmati rice
100g frozen green peas
500ml vegetable broth
40g toasted pine nuts
Small bunch fresh dill, chopped
1 tbsp olive oil
Toast rice in olive oil.
Add vegetable broth and cook until nearly done.
Fold in green peas for the final 5 minutes.
Garnish with dill and toasted pine nuts.
