A traditional vegan take on the classic Hamantaschen pastry.
2½ cups flour
½ cup sugar
1 tsp baking powder
¼ tsp salt
½ cup neutral oil
⅓ cup plant milk
1 tsp vanilla
¾ cup thick jam or poppy seed filling
Mix dry ingredients.
Stir in oil, plant milk, and vanilla until a soft dough forms.
Chill for 30 minutes.
Roll to ¼ inch thick and cut 3-inch circles.
Add 1 teaspoon of filling in the center and pinch into triangles.
Bake at 175°C for 12–15 minutes until lightly golden.
