A delightful and easy recipe for chocolate mousse made with silken tofu and dark chocolate.
300g silken tofu
120g dark chocolate (minimum 70%)
1 tablespoon cocoa or cacao powder
70ml liquid sweetener (maple or date syrup)
1/4 teaspoon salt
Handful of chopped nuts for decoration
Break up the chocolate and melt it in a heatproof bowl over a pan of boiling water, stirring occasionally.
Once melted, stir through the liquid sweetener and cocoa/cacao powder.
Drain the tofu and blend it with the salt in a food processor.
Add the melted chocolate mixture to the blender and blend until smooth.
Spoon the mixture into 6 ramekins and refrigerate for about 1 hour to firm up.
Decorate with chopped nuts before serving.
