We had great fun at our veganuary cooking class, led by Zoe Marks, our community and events manager and resident chef. Participants were a mixture of vegans, vegetarians and aspiring vegans.
Together we cooked beetroot and blackbean burgers, South-Asian inspired slaw, sweet potato polenta fries and chocolate mousse. Participants appreciated how much healthier and tastier homemade burgers are than the processed ones and are much simpler and quicker to make than you might expect. We shared vegan cooking tips and spoke about how to eat well on a vegan diet, including aiming for 9 portions of fruit and veg a day or 30 different plants a week, and plant sources of protein. At the end we sat down together for a delicious dinner.
