Celeriac Salad

Serves: 6
Delicious and healthy and fresh!
Ingredients
  • 1 whole celeriac
  • Juice of one lemon
  • Juice of one lime
  • 15 dried apricots, chopped
  • 10 sundried tomatoes, chopped
  • 5/6 tablespoons of olive oil
  • Salt and pepper to taste
  • Chopped walnuts to serve
Instructions
  1. Grate the celeriac and then stir in all the other ingredients.
  2. Serve with a side portion of avocado and humous with some broken up walnuts sprinkled on top.
