Delicious and healthy and fresh!
- 1 whole celeriac
- Juice of one lemon
- Juice of one lime
- 15 dried apricots, chopped
- 10 sundried tomatoes, chopped
- 5/6 tablespoons of olive oil
- Salt and pepper to taste
- Chopped walnuts to serve
- Grate the celeriac and then stir in all the other ingredients.
- Serve with a side portion of avocado and humous with some broken up walnuts sprinkled on top.
