Butter Bean, Roast Garlic and Coconut Spread

This recipe for a new and exciting alternative to hummus is deliciously tasty. Thick and creamy it’s perfect for spreading and dipping. Serve with raw vegetables or oatcakes to dip, spread in a sandwich with avocado or chicken or enjoy with a salad
Ingredients
  • 1 bulb garlic
  • 1 tsp olive oil
  • 400g tin butter beans, drained
  • 6 tbsp natural CO YO natural vegan yoghurt
  • ½ lime
  • 1 tsp cayenne Pepper
Instructions
  1. Heat the oven to 200C.
  2. Slice the pointed end off the top of the garlic bulb to expose the cloves.
  3. Put on a square of foil, enough to wrap it in, and drizzle with oil. Wrap up the bulb and roast for 35-40 minutes until the flesh is melted and sweet.
