Sag Aloo


A delightful, authentic spinach and potato curry, which uses homemade curry paste.

Sag Aloo – Spinach and Potato Curry

Serves: 4
  • 4 medium to large potatoes, cubed
  • 250g spinach
  • 1 large onion, finely chopped
  • Tomato puree
  • Curry paste
  • Chilli (optional)
  • Spices (see recipe for quantities)
  1. Boil potatoes until soft (never too soft)
  2. Boil spinach until wilted
  3. Keep the above separate
  4. Heat 2tbsp oil (medium heat)
  5. Add ½ tsp turmeric
  6. Add tsp salt + pepper
  7. Add ½ tsp black mustard seeds
  8. Add onion
  9. Add full quantity of above curry paste
  10. tsp cumin
  11. Half a small can of tomato puree
  12. ¼ can chopped tomatoes
  13. ½ chilli (or more) optional
  14. Add potatoes
  15. Add spinach
  16. Add 1 tsp garam masala
