Fasolia (sometimes spelt Fasoulia) is a traditional Sephardic dish. It also has roots in Syrian and Lebanese cuisine.
Ingredients
  • 450g/1lb green beans
  • 1 – 2 cloves garlic (depending on taste), crushed
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 3 large ripe tomatoes
  • 1 tablespoon tomato puree
  • 120 ml/half cup hot water
  • sea salt and freshly ground black pepper, to taste
Instructions
  1. Prepare the green beans by cutting the tips off and washing. Cut any particularly long beans in half.
  2. Prepare the tomatoes by placing them whole into a bowl. Cover with boiling water then leave for 30-60 seconds, or until the skins have split. Remove the tomatoes from the water using a fork. When they’re cool enough to handle, peel off the skins, then chop up the tomatoes.
  3. Fry the onions and garlic in the oil for a few minutes, then add the green beans, tomatoes, tomato puree, salt, pepper and water.
  4. Simmer covered for 30 minutes, until the beans are tender.
  5. Serve with rice or crusty bread.
