Chocolate Chip Muffins

Serves: Makes 8 muffins
These muffins are best served warm when the chocolate pieces are melted and still gooey.
Ingredients
  • 300 ml boiling water
  • 50 g creamed coconut
  • 225 g self-raising flour
  • 1 tablespoon baking powder
  • pinch of salt
  • 115 g soft light brown sugar
  • 45 g cocoa powder
  • 60 ml sunflower oil
  • 175 g dark chocolate
Instructions
  1. Preheat the oven to 180°C/350°F/gas mark 4.
  2. Put the creamed coconut in a bowl and pour bowling water over it. Stir until dissolved then set aside until cool.
  3. Break up the chocolate into chunks.
  4. Sift together the baking powder and flour then add the cocoa powder and salt.
  5. Stir in the sugar.
  6. Form a well in the centre of the mixture and pour in the dissolved coconut and the sunflower oil. Mix well.
  7. Add the chocolate.
  8. Spoon the mixture into 8 muffin cases and place these in a muffin tray so the shapes of the muffins stay in tact.
  9. Bake for 15 minutes.
  10. Transfer the muffins to a wire rack to cool just slightly then serve warm.
